Anyone for Gaulish?

I am trying to get to grips with Gaelic, when I am directed to this video, wherein the poster is speaking reconstructed Gaulish.

Two questions: 

  1. How do they know how the language was constructed in the written form, i.e. sentence structure, etc.?
  2. How do they determine pronunciation and emphasis in the spoken form? 

I have had to learn that in Gaelic the emphasis is placed at the beginning of a sentence, and not within a word, whereas in English you can place the emphasis on a certain syllable of  a word anywhere in the sentence.

So, how they managed to reconstruct Gaulish, I don’t know.  Clever, they must be.
